Recipe – Sweet Potato and Capsicum Salad
This salad recipe can be served hot or cold!
- 4 medium sized sweet potatoes, peeled and diced to 1cm to 1.5cm cubes
- 1 onion, diced
- 1/2 tsp salt
- Sprinkle of pepper (optional)
- 3 tbsp oil
- 2 tsp minced garlic
- 1 1/2 tbsp lime juice
- 1 red capsicum, diced
- 1 1/2 cups of cooked, or 1 can of black beans drained
- 1 cup of canned or cooked corn (optional)
Toss the prepared sweet potatoes and onion in a bowl with the oil then place in a single layer on a baking sheet and sprinkle with the salt and pepper. Put it on the centre rack in a cold oven then turn the oven to 220 degrees C and bake for half an hour or until the sweet potato cubes are soft. Since you can serve this hot or cold, if you want hot just add the remaining ingredients to a bowl, toss well with the sweet potatoes and serve. If you intend to serve cold, just allow the sweet potato to cool first then toss with the other ingredients.
